  • Toasted corn tortillas.
  • 2 eggs.
  • 1/2 avocado.
  • 1 bag of Ridetti refried beans (227g).
  • Chives.
  • Optional: sour cream and Salsa Ranchera.
  • Heat up Ridetti beans in a skillet.
  • In the same skillet, cook the eggs sunny side up, until the yolk is in your desired state.
  • Cut the avocado into strips and finely chop the chives.
  • On a toasted corn tortilla, place a layer of beans, then add the eggs, avocado, and chives.
  • Optional: Add sour cream and/or salsa ranchera.
